Thinking ahead to next winter already and want to prep up a white stout that's got a good bit of coffee flavor and aroma up front, a reasonable amount of vanilla, and a bit of chocolate on the finish. I don't want to make Frappucino beer, and while I want it to have a nice creamy mouthfeel and decent body it shouldn't be saccharin or cloying. I've never brewed with coffee or cacao nibs so any input there is good.

Good recipe. You might consider using ground coffee, crushed beans, or instant coffee instead of whole beans. Those don’t tend to give off much coffee flavor unless they’re cracked at least. Everything else looks pretty good.

I disagree with the coffee statement.
I make a beer called Nuts about Beans that has whole bean coffee added after cold crash and the coffee that comes through is impressive.
 
We always used ground coffee.

I have made a few golden lagers with small %s of chocolate, Spec x, midnight wheat, etc. they are still very golden and clear, but you get some different flavors on the backend which would fit very well with this mission.

I would say that you could get up to 1% and gain a nice chocolaty background flavor without much impact to the final color. I would look at the pale chocolates(mine is Bestmalz @330L). Special X/Special B are also good options at very light %s for interesting background flavors without alot of color added.
 
Here's the beer I was speaking of. Tons of coffee and peanut butter!
