What's a saison

With my well water, the cut-up lemons that I use in the mash actually bring my pH in line...the citric acid just taking the place of lactic. I also zest the lemons first and add that at the end of the boil.
 
I personally dont love saisons, but we made one for years. That was actually where the Diastaticus infection came from...we paid for it from white labs. Cost the brewery an INSANE amount of money. we had to dump a whole bunch of tanks(60s and 90s) and buy back alot of beer. I will never bring saison yeast in house, too risky.

Are you positive it came with the yeast
It was white labs yeast?
I've used that yeast 3711 and repiched multiple times
Now I use dry yeast
Belle Saison mostly I don't think they had a problem

ya. they would never admit to it though. screwed over a shit load of breweries back in 2015-2017. took us years to get past it. back then they didnt really test for it like they do now.
