getting ready to brew a Bitter up this week, recipe came from here Dj's Mo Bitter, (have not seen him here lately) he has the Burton on Trent water profile for the beer.

I set it up with my water and I have never put this much gypsum in .......Ever

How does this look, @Ozarks Mountain Brew @Nosybear ......anyone, here is the profile code ......is this even safe!

I would not do that, just add enough to up the calcium and I would try to keep at least a 3/1 ratio on "gypsum / calcium chloride", you could go 4/1 but thats pushing it for me that beer will be harsh

Roger that. Key to water is a light hand. Too much calcium becomes harsh, minerally. I generally make sure I have enough calcium, then acidify with acidulated malt or mineral acid to reach my desired pH. If you want minerally, go ahead, but it might not be as nice as you'd like.
