Anyone have an idea what may closest match this in the recipe builder? Not trying to be dumb but can I build a custom grain profile and where do I get the info to do so?

It depends on what malting company it comes from. If you know that, it is usually possible to lookup the stats on their website.

A google search for "toasted rye malt" comes up with:
    http://www.weyermann.de/eng/produkte.as ... &sprache=2

Looks like their Chocolate Rye Malt (roasted malt) is the closest thing, has a lovibond of 188 - 300, and an extract of 65% (*46 = 29.9 ppg).
