Hey Guys,
I have been making all kinds of extract and AG brews and priming bottles with raw sugar and DME. I'm getting ABV between 4% and 6%. I'm happy with flavours, and ABV but the carbonation feels a bit like soda water. It bubbles alot and does'nt retain its head. The bubbles are large like a coke or sprite and feels fizzy in the mouth.
Can anyone tell me want i'm doing wrong?
Thanks,

is the beer thin or just carbonation issues ? sounds like it just needs more time, how long do you condition

2 types of carbonation, pressure in the vessel and carbonation bonded to the beer, what your describing sounds like the carbonation isn't bonded with the beer yet and it just coming out as pressure in the vessel, with time that will change

The last 2 Hefeweizens i did had 2 months conditioning. I tried the beer after 1 month for a flavour test and it didn't change much.
Do you know any special tricks to get the beer to bond?
Ive never experimented much between secondary and bottling.
Thanks,

sounds like the beer gravity is low too, possibly the yeast in a bottle 1 month is plenty unless its high gravity, after the time it takes for the carbonation to finish like a week or 2 make sure you store it cold if you can that helps bond carbonation, the colder the better
