Found a recipe that calls for 2.5 pounds of corn grits, can i skip the cerel mash and just use flaked corn?
would it be a pound for pound substitute?

Yes, if both are 100% corn so it would be a pound for pound substitution. You could also use Quick Grits which do not require a cereal mash.

Edit: Just googled Instant Grits and found that some, like Quaker, are not 100% corn. So I added if to my statement above.
