hi guys been given a young new world saison kit for xmas from my friend I've made this kit before its ok but i fancy trying something a bit diffrent a while ago i was in Chicago and tried the goose island kisetsu there sake flavours saison was nice i wanna try and recreate this using the kit koi rice and sake yeast maybe finish with some peach what do you think ? any ideas will be useful gonna make in a couple of weeks once everything arrives :)
 
Yes I don't want it to be exactly that but close enough
Was gonna brew the saison normal so 2-3 three week fermentation
Then rack over the koji rice in another fermenter add sake yeast
Leave for another 2-3 weeks then add peaches and the hops leave for
Five days and bottle was just wondering if anyone had tried it or had any feedback was gonna leave for about 2-3
Months to age because the abv will be quite high
