Hello i brewed a nice neipa but it is missing that nice sharp snap of fruit i was hoping for. It is drinkable but i really wanna try add pineapple to the beer i have 15l (4gallons) of beer in the fermentasaurus and it is under pressure at about 12 psi. is it possible to put the fruit into my keg, purge the air out and then transfer the beer and put it in the fridge for two weeks as it carbs up? or will the fruit fermenting mess that up?
 
or do i just rake ontop of it into secondary? and about 4lbs
 
Can't help you with the process, but this a great example, just a slight hint of pineapple flavor...

You need to denature the enzyme, I can't remember the name. Pineapple is a natural meat tenderizer so you don't denature the bromelain, there, I remembered, or no head on the beer. Otherwise it's just a fruit addition.
