There's an old brew from an extinct Denver brewery, Tivoli Helles, described as a Munich-style Helles. Recently Bill Eye at Prost Brewing has resurrected the beer as a contract brew (it isn't on the beer list - but if you're at Prost and want to try it, ask the server - sometimes they have a secret stash). Does anyone have a Helles recipe that starts sweet, good bread and biscuit flavors, finishes dry, little to no hop flavor? I'm working on one using a Colorado two-row instead of a Pilsner but if anyone out there has a good starting point, I'd love to hear about it.
