Hello!

New to this beer brewing life.

I know the rule of thumb seems to be bottle and sit for 2 weeks for carbonation but is it always like that? will most recipes dictate if it needs more time?

It is best to wait 2 weeks If you get impatient try one after a week, but is best to wait. After the two weeks it is also best, but not necessary, to refrigerate for a week. This will help the sediment settle and compact in the bottom of the bottle, and keep it out of your glass.
Experiment!
That is what this brewing beer thing is all about. Nothing is completely right, and nothing is completely wrong.

2-6 weeks usual works. Only way to know, is try one. ;)

Fill a pet bottle (like a coke or sprite bottle) when bottling your beer.
You can sort of follow carbonation by squeezing it. Once you feel it and it seems properly carbonated, put a (glass) bottle in the fridge for a couple of days and then taste.
Carbonation depends on amount of sugar, carbonation time is influenced by temperature as well.
Good luck & welcome
