So I’ve made this once but it needed something else. This batch I changed the 3in Zappa hops from 28g to 56 and the S-05 to London lll.
You love your malt I see man!
Not used Zappa.
I rekon she'll be tasty.

This is personal choice I'd drop the C60 and prop up the Munich with its amount.
But I'm splitting hairs and you tasted this as is first time.
If your looking for something else hop wise than ignore this.:)

You could hit it with some Chinook for some extra pine ressin with the tropical fruit of the Zappa maybe o_O

I like the c60 dropped for Munich
 
Sounds like you are going for a more European version. The American version would just be Pale + 5 ish% c40.
If looking for something different going the English route, look at some ESB recipes. 8% English C 80, Maris Otter. Fullers yeast, Fuggle, EKG.
 
The London III will be perfect in that Pale. Don’t know Zappa hops but you made a version before so I bet this will be great.
 
51 ibus is a bit high for an APA, but you're the cook!
I do like a bit of caramel malt in my APA and about 35 ibus.
