You can always disconnect your liquid lines when not using, or use tap covers

Good question. I'm not sure really I just can't imagine stale beer in the tap being good in the long term.

No more stale than what is in the keg.

I only rinse the lines between kegs. I've had kegs that went several months without getting touched, and next pour was fine.
