hoppy beer

Hi All
just a quick question, I been brewing some of beers off here and following the recipe . they are all good,but some of the beers are a bit Hoppy for my taste , what is the best way to brew a beer that has not that hoppy taste, dont get me wrong I like to taste the hops but not to strong taste, if that makes sense.

You can follow a recipe, but adjust it to your own tastes. For example, you could take an American Pale Ale with 50 IBU’s, and tweak the hops additions lower, to say 30 ibu’s. If a recipe calls for an ounce of hops at 60 minutes in the boil, you could lower the amount by half, and do the same with other hops additions throughout the boil. Think of a recipe as a set of guidelines, not as a set of rules. You can adjust any recipe to make it your own.

And work out the BU/GU ratio.
I don't like my beers too bitter as well and the ratio gives me a good indication of perceived bitterness
 
Looks at beer styles that are less hoppy and use traditional European hops.
Those hops are less assertive than most of the newer bred and American hops.
Also a hop wheel graph will help with understanding of what specific hops will contribute and use the hops that fall into what you're looking for.

There's bitter hoppy and there's 'aroma' hoppy. Which (or both) is too much?

(Aromas vary widely, but they are not bitter)

Less hoppy can be cured by less hops, but what and when can vary.

You can also use the same amount of hops and reduce the time they are boiled. This will extract less of the flavor. This is more for bittering hops than aroma.

Also if you don't like the taste of the piney or citrus hops then avoid one like citra, centennial, cascade, amarillo. Try Willamette, mosaic, EKG, saaz. These are more earthy and saaz has a nice spicey edge to it
