I have a brew day scheduled for Saturday. I will be using 1/2 pack of Notty, rehydrated. My question is can i store the unused yeast, sealed and in a zip lock bag in the fridge until next weekend? Would sterilizing the outside of the packet before opening / using be sufficient to prohibit any issues?
 
Why only a 1/2 pack?
As far as storing yeast, it's not optimal but it can be done. Both oxygen and sanitation will be very important but with care in handling, I think you can get away with it.
Sanitize everything, carefully pour out only the weight of yeast to be used, close up yeast pack immediately pushing any air out of the pack (like rolling up a carpet). Put opened pack into a Ziploc bag and roll the air out of it before sealing up. Store in the refrigerator.
