Dry Beer but low attenuation?

I'm confused. I brewed a batch of Mosaic Smash,with US-05 should have been 5%. I hit all my numbers on brew day, but didn't take an FG reading as I left it 2 weeks and it had definitely finished. The beer is very dry, which I thought was just US-05 and maybe a low mash temp. I took a reading with a refractometer today, and it read 6 Brix. I was expecting it to be 2 or even lower. My OG was 12 Brix. I have tested it with tap water and it reads just over 0 so its close or close enough.
If I've got low attenuation why does it taste so dry??
