I've made several NEIPAs but I always love a good WCIPA. I'm spoiled by having Fat Heads right by my house and having fresh Head Hunter on the regular. Not looking for a clone of that but would love to try a WCIPA that is more Citra forward. I have some Citra, galaxy, mosaic, and nectaron hops in the freezer and was going to order some more from Yakima Valley soon. I'm open to trying new recipes so I'm not pigeon holing myself to one hop or another, just favor Citra.

Side question, I've noticed some of the 2024 crops of galaxy and nectaron released recently. When do ones like Citra and galaxy tend to be released?

That looks right up my alley. Thanks.

Dumb question, how do I adjust ingredients for batch size? Looking to do the typical 5-5.5 gallon batches instead of the 8.5gal it’s setup for.

Awesome little trick. Thanks! I guess I could've just done "Scale" through my Grainfather app too.....

I put in the scaled 6.08gal recipe, which is just the base amount for the GF30 and my FG estimate was way lower. Bumped up the Maris Otter a couple LBs and it put it back in line with the original recipe. Gonna have to give this one a try soon.

The 2023 Galaxy hops from Yakima Valley were awesome. Maybe best since 2017. I use all these hops you mentioned, too. With that, I don't have a recipe but enjoyed the forum post and the responses.

I really liked the 2023 Galaxy hops, as well. Went through almost a LB of them this year. This is the first year I've started brewing though so I dont have any other batch to compare. The Nectaron I thought were pretty awesome as well.

Excellent suggestion!
Just received a shipment from Yakima Valley and I got a free 4oz of citra hash. Thinking about using that in the dry hopping and tossing in like 2oz of mosaic pellets. Thoughts on the hash vs pellets?

Planning on making this recipe either Saturday or Sunday this weekend. Going out of town next week for a wedding so I'm going to do a double brew session this week so some work can get done while I'm gone.

I stopped using it, it was hit or miss. The problem was that there is no guarantee that it's 100% Citra. But if I got it for free, I would use it for sure.

Plan this weekend is to brew an Oktoberfest this Saturday AM and then Wayners Sunday AM. Trying to kill off the last of my NEIPA keg so I can use my kegerator for fermentation with the Oktoberfest. The Pale Ale I will leave in the dog shower. Oktoberfest should be done in the kegerator when it's time to keg and cold crash the Pale Ale. Trying my hand this time I think at water profiles. I exported my recipes to the Brewfather app and it's really nice for that feature.

Starters rolling for the Wayner Pale Ale. Did my Oktoberfest this morning. We’ll see how that goes. Color was great.

Got Wayner's recipe tanked up yesterday in the fermenter. Man, making a yeast starter seems to make a huge difference in both batches. Both had almost immediate activity as opposed to just dumping the yeast from the packet and waiting 24-36 hours to see action. Fermentation is running a little hotter than I'd like at 79˚ but there's nothing I can do about that at the moment.

I did make a slight boo boo and added the whirlpool hops at a higher temp than was recommended (170˚). I wasn't paying attention watching football and my Grainfather beeped for the next step so I got it going and slowly added the hops then realized it wasn't fully cooled down. Other than that everything went great and the color and aroma is fantastic.

Got a SG of 1.055/1.057 via Tilt. 17 hours later, it's already down to 1.038ish. Going to do my dry hopping next Sunday when I get home from vacation with 4oz of Citra hop hash and 2oz of Mosaic pellets and let sit for 3 more days and then keg it up on that following Wednesday. By then, my Oktoberfest should be done fermenting and I can pull it out of the kegerator for a diacetyl rest and then cold crash it and let it lager in the keg for 4-6 weeks.

You can pitch heavy for more immediate activity too.
I thought mine took longer this time, and I had activity in 12 hours. It is usually about 1/2 that time.

Wayners came out beautiful. Nose, color, and taste are all fantastic. Colors a tad lighter than it looks in the photo.

SG came in on point at 1.057
FG came in a little higher at 1.014/15.

Can’t wait to get this one cold crashed and carbed up.

I'm not a big fan of Citra forward ( I do like Galaxy and Mosaic), but that looks beautiful, and those numbers look awesome.

I did 3.5oz of both citra and mosaic in the whirlpool and then I dry hopped with 4oz of citra hash and 2oz of mosaic pellets.
