Good afternoon. I use a water ro/di water filter to build my brew water and I’m seeking suggestions on what the mash water chemistry for ca, chloride and sulphate should be like in a saison. I brew 5 gallon batches and this will be my first saison come spring in MA. I also need to read up on the differences between a saison and a farmhouse ale. Thanks in advance.
