I brewed a Trappist Single at the beginning of March and pitched some Suburban Brett (Brett Brux) once primary was bottomed out at 1.010. I'd say the Brett has been in secondary for about 3 weeks. Does anyone have any experience with this Brett strain and can give some insight into a timeline before it can be packaged? I was going to for a minimum 1.5 months but can push it further if needed.
