Hey all,

This is my first pass at a Bock. Shooting for middle of the expected range. Still using up my Columbus Cryo, but the loral and the perle seem appropriate. I have fuggles and some other decent hops on hand that i could sub in.

I used as much munich1/2 as i could get away with. I could sub in some vienna if needed. i have C15/40/120 and extra special malt that could also slide into this recipe. I had some Roasted barley, then some Black malt in there, but i think that the midnight/chocolate mix is more subtle and keeps it from being too roasty flavor wise. I might sub in a small amount of c40?

I will likely run this with Apex Munich as cold as i can get it(52f if i can get it down there). probably wont pressure ferment it.
 
Almost 7% at 24 IBU. I can dig it.

I've never brewed, or even had a beer like this to my recollection.
I might steel this recipe!

Really I was just trolling all the folks living in climates not meant for human habitation. :p
lets be honest. South Ga back in the day was like speed running malaria....i still feel that way when i play disc golf in the woods/swamps. the bugs down here are next fucking level.
 
anybody got suggestions on the grain bill? i dont have enough munich go straight munich, but i felt that a combo of munich1/2, victory, and 2row would be sufficent.

this is slotting into my "amber" line so i erred towards the amber side of the style. i could drop the midnight wheat and leave it at around 14 srm.

i felt that the raison notes from the spec x would be nice in a heavy malt forward beer, but i could easily drop the spec x in and leave the midnight wheat to make up the color. this would be a more "clean" maltiness.

I also have extra special malt that could be subbed for both the chocolate and the spec x. it would have a touch of malty roastiness?

I have not had a traditional bock in a very long time. maybe i will grab some on my way home and sample them.

IKR I'm in a drought that's been less than .5" rain in 90 days. Inquiring minds want to know where the mosquitoes are coming from!

lol thats half of the challenge, i dont really know what i am shooting for. color wise its a fairly large range. some are a heavy golden/orange and some are amber/brown. i guess i am sort of shooting for the the amber/brown range.

im also showing significant restraint to not add smoked malt in there lol!
 
I say DO IT, and let the smoke haters fume!

( I run a token amount of smoked malt in my alt )

I would keep the spec x and midnight wheat, imho 14 is too light for a bock (but I have seen lighter). Also mash a tad high to keep the maltiness, nobody likes a dry bock. The base malts won’t matter much, so what you got is fine.
 
I actually went to my local liquor store and purchased a few examples.

apparently rogue dead guy is a maibock???? way overhopped IMO. also got a german Doppelbock. Didnt buy any Shinerbock, but i thought about it.

Overall, i had several options for doppelbocks, but very few regular bocks. several Maibocks though.

overall i think that the more traditional is my preference.

As much Munich as you can afford
No Pilsner except in a Helles Bock
The victory is key, it improved my Bock IMO

interesting. i thought the recommended usage was up to 5%?

and ya very tight on munich right now. I am getting towards the end of my grain on hand. I have about 6 batches of base malt left and only about 40lbs of each type on hand. Gotta keep some munich on hand for other batches! I am brewing a chocolate raspberry stout today and then tomorrow im doing my session IPA. Next week i am brewing this bock and probably a straight Kolsch. Filling up my cooler!

Actually looked at my recipe and it's 7.5% go at least 5% victory
Couple years ago my friend said he wanted a malt bomb so upped it. We all liked it
Do you do small test batches or just go for it?
