I have a sour recipe I really like. Is it as simple as adding fruit after the primary to turn it into a fruit sour?

Depending how much residual sweetness you want, adding to the fermentation while it's going will process the excess sugar that the fruit has.
You do have to be careful adding fruit post fermentation if you are gonna bottle it.
