I took a class At OU several years ago, its really interesting but for the average home brewer it would go right over their heads, Advanced chemistry knowledge is a must

The "Yeast" book from the brewers association

+1 on the "Yeast" book. Palmer's "How to Brew" is pretty good, but less detailed. I have to say, of all the books I've read on brewing, "Yeast" improved my beer the most.
