Hi guys. I really want to learn some of the biology of brewing. Can anyone recommend some good books they've read.

The "Yeast" book from the brewers association

+1 on the "Yeast" book. Palmer's "How to Brew" is pretty good, but less detailed. I have to say, of all the books I've read on brewing, "Yeast" improved my beer the most.
