A question about final gravity

    I have a Kentucky Common brew in the fermenter and the final gravity target in the recipe was 1.009. On day 14 the gravity was 1.014, and three days later it hasn't moved. My question is can I bottle it with the gravity 5 points above target? This is my fourth batch of beer. The first three came right on target. I'm a little puzzled. The original gravity was 1.050

    If it hasn't moved for three days it is most likely finished, if you want you can give the fermenter a bit of a shake and rouse the yeast and give it a few more days and maybe increase the temp a degree or two. You can bottle with the gravity 5 points above the target as long as the fermentation is finished. i wouldn't stress too much about not hitting the target as long as you are somewhere around the mark.

    There's no rush unless you make one so letting it sit a couple days is just easy insurance.
