30qt pot for extract brewing

I use steeping grains and then extract, so should I be good with a 30qt (7.5 gallon) pot? I've got a turkey fryer setup and was thinking that I should be good with a 5 gallon boil, then topping off any boil-off with water. I've used much smaller boils in the past and have had to top off with a few gallons of water, which has still yielded good results. I was thinking the bigger boil size would certainly help with hop utilization.
 
That will work, but you might as well upgrade to a 15 gallon so you can do 10 gallon batches someday.

You will need a chiller of some kind - immersion chiller, counter flow, or plate, because you need to cool down all that volume fast.

Make sure it has a ball valve.
 
FYI: I picked up a 9 gallon pot with thermometer and ball valve for $107.97 from adventures in homebrewing ....
Worked well boiling 5.5 gallons, going to boil with 7 next time.
50' x 3/8 wort chiller hooked up to kitchen sink, keeping a whirlpool going, chilled the 5 gallons in about 20 minutes.
