Pitched a pack of farmhouse dry yeast into 3.25 gallons at 1.052 this morning. 10 hours later it was burping through the airlock every 3.5 seconds.
I can imagine they gossip amongst themselves. More like washwomen.Any of the farmhouse strains are fast acting; sort of the busybodies of the yeast world.
It's been riding at 76 Sunday, Monday, and so far today and still burping every 8 seconds.Just wait, if you raise the temp (76-80F) it'll be done in 24 hrs and be super tasty to boot!
I got similar results with a 4+ month old pack of Imperial A09 Pub yeast. I used some of the sparge runoff to make a Real Wort Starter (RWS). I pitched after about 8 hours on the stir plate. I checked first thing the next morning and had similar airlock activity. I'm going to try a RWS for my next few brews to see if I get that result every time.Pitched a pack of farmhouse dry yeast into 3.25 gallons at 1.052 this morning. 10 hours later it was burping through the airlock every 3.5 seconds.
