Quick start

Any of the farmhouse strains are fast acting; sort of the busybodies of the yeast world.
 
Pitched a pack of farmhouse dry yeast into 3.25 gallons at 1.052 this morning. 10 hours later it was burping through the airlock every 3.5 seconds.
I got similar results with a 4+ month old pack of Imperial A09 Pub yeast. I used some of the sparge runoff to make a Real Wort Starter (RWS). I pitched after about 8 hours on the stir plate. I checked first thing the next morning and had similar airlock activity. I'm going to try a RWS for my next few brews to see if I get that result every time.
