    Ah, OK I have done that quite often. My current simple cider has been done like that. I just can't say I can taste any hops. I'll just have to keep tasting :)

    Just an extra titbit The bicarbonates in your water are much more inportant than the pH. Bicarbonate is a buffer to pH change as they react with acid. Once all bicarbonate has reacted, any extra acid will make the pH drop radically
