    Secondary headspace

Gday fellas, I've got myself set up with a secondary vessel, I'm trialling some hops pellets ( hallertau) and they have made this brew quite cloudy I'm hoping that the secondary will help to clarify it a bit, but my question is, do I need to purge the oxygen out of the vessel or will there still...

You know you did it wrong when...

Well technically my troupe of farting elephants was a mistake! I made the newbie error of brewing too warm and getting way to much Sulfur smell! Since I've ditched the heat belt the brews bubble along at a steady pace and the smell if any, is contained within the brewroom not seeping into all...

    Common problem

To you sir I tips my hat, Nosybear! I do my best not to drink through the week but on Friday after work look out! And when the brew is good the handbrake fails!

You know you did it wrong when...

you come home from work and it smells like someone's been farting in your house like a troupe of circus elephants!!

    Common problem

I should tack this to 'what am I drinking now' but I'm not sure! Is it just me or do any of you have the problem of waiting for a potential 'good' brew to come of age and while your waiting you sample 1 or 2 to test the progress. It finally hits it's date and it's good, then next minute, where...

    What is a beer

So I can walk into my local bottle'o and grab a slab of draught or rock into the pub and ask for a schooner of draught! Stubbies/tap beer same brewer same name, some extract homebrews are even advertised the same, as draught! Is there a way of guessing/telling weather it's an ale or lager?? as...

    Clone Beers

My guess is that, that separates the 'home brewers' from those that aspire to take it to the commercial level! we home brewers tend to experiment with brews endlessly rather than perfect a particular brew! I myself find that even though a brew might make it to the 'favourites' list, I'm...

What are you drinking right now?

Just at the back end of a maintenance shutdown at work and have spent the last few days 'testing' a lager that is hitting its straps right now! If I keep drinking at this pace I might need to consider upgrading my setup!

    What is a beer

Thanks for that guys! I suspected that lager was what I was dealing with! The brews I have done are quite 'meaty' and flavoursome and with the addition of hops have developed a licourice hint! Which is very drinkable! More research and testing is required I think....off to the fridge to do more...

    Cleaning bottles with caustic soda...

I double rinse the sediment out of the bottles after drinking then wash with sodium metabisulfate and rinse with 70c water to remove residual detergent and caustic! It's fiddly but worth it, haven't had a bad one yet!!

Keeping low temp is not a problem for me, my latest brew started at 18c and has actually dropped 3c, lucky me I guess! When summer hits and the ambient temp rises I will look into a swamp cooler! At the moment looking forward to seeing how the low brew temp beers taste!

I'm totally loving the feedback, you guys are unreal! I am considering my first step into BIAB but after spending the weekend drinking an amazing improving apple cider, an ale, and lager brewed extraction style I think I'll hold off for a bit (shed room is an issue ATM) but your suggestions are...

    What is a beer

Hi guys sorry to be a pain in the arse, but here in Oz we have beers called draught beers, my understanding is that draught is a method as in 'draught a keg' rather than a style of beer! My question is as an extract brewer if I'm brewing draught what the hell am I actually brewing?? BTW I...

That video was brilliant, it debunked some of the myth and explained a lot of the processes, it's got me thinking about stepping up to all grain! Maybe BIAB first! and I didn't even see the hardware you were talking about??

Hahaha I was just letting the thought train loose for a bit! But it has got me thinking about secondary storage, I think I'll be looking at a couple of carboys!

    Experiment time?

How would inoculating a brew with a penicillin type strain late stage to introduce blue cheese type flavours??
