My Cream Ale is my flagship beer. My first recipe I used equal parts flaked corn and equal parts flaked rice. I thought it was too sweet, so on the second batch, I reduced the corn and increased the rice significantly and it turned out perfect and has been replicated many times over the years. I'd stick with the 2-row and add some flaked rice for the crispness a cream ale, US-S05 is what I use, but last week when I brewed it, I didn't pay attention to my inventory and has no S-05. I use two brewbucket fermenters, so I decided to pitch one with BRY-97 (West Coast Ale) and one with Diamond Lager yeast. We'll see how they turn out.
