BIM BAM HEFE!

I'm not a big Hefe fan, but I love that you are having some fun brewing at home tomorrow!
I bet auto mechanics aren't excited to work on their cars on their days off...
 
We started at 6:05 am with water pulled but not hot.
Wrapped up, Cleaned up and home at 10am.
Pitched at 9 pm and activity at 5 am the next morning.
Spunding started on Wednesday. Most likely will keg on Monday.
I'll have too get a Pic when we sample it on Sunday
 
Actually seems like a good name to me.

I’ll come sample it on the 26th.

That will be on at my house, not the shop unless I bring a growler up
 
One of these days, I'm going to get around to doing one of those. I like the simple looking recipe. Did the 68 degrees give you the balance on the clove/banana? I know Don likes to do those, and from the Zoom meetings, I understand that you don't want to overpitch those beers. I use White Labs liquid, so I might not have a choice without withholding a bunch of yeast.

I used 2nd gen Lallemand Munich yeast and I likely overpitched a bit as it was a very healthy slurry.
68° works great in as a balance of banana/clove.
This was the first time I added a bit of muich light to a hefe and I'm really happy with the outcome.
Im almost always in favor of over pitching vs under pitching, especially when using a sulfur producing yeast.
Not that you can't scrub the sulfur out, but I'd prefer not to.

A mild over pitch won’t hurt. A huge over pitch will suppress the desired esters. A pure pitch is fine for 5 gallons. Three of them is a huge over pitch.
