    I've not made a wheat-based beer in a while, so I'm excited to give this a go. Any input on Lallemand Munich Classic as a dry yeast option? It supposedly has a balance between banana and clove if the temperature is mid- to upper- 60s (which might be a challenge this time of year!).

    The Brewmaster's Bible was my go-to back in the day. Outdated now, but still some useful information on brewing techniques. The recipes are solid, but understand the available ingredients were different 30 years ago :)

    I've been using AI more to figure out additives for a water profile than anything else. I'm still learning how much of each to get the right combination for a given recipe, so that's been pretty helpful.

    I guess hybrid? Electric HLT (old DigiBoil kettle), mash and batch sparge in a rectangular cooler, then boil using propane.

    To be fair, we brewed a "normal" batch prior and were a bit tipsy at that point. Still sober enough to dump stuff into a carboy though, I my opinion!

    My setup isn't really conducive to step mashing (batch sparge), so I stay away from recipes that mention it. Maybe some day...

    Good luck. A friend and I tried their Irish Ale kit (5 gal) and it was a dumper. In all fairness, it could have been us. Maybe a real yeast will make a difference!
