this is what I used https://matesratehomebrewsupplies.com.au/product/deltamalt/ it's an enzyme Blend having beta-glucanase, Alpha Amylase and Protease. you don't need either of the last two but that's what did the bulk of the heavy lifting for me when I was brewing with Rice.

yeah I used a hoard of Exogenous Enzymes to try and get conversion from my undermidified home malted rice :D

went and had a look at that ginger beer sorta experiment with different tuneric/ chilli additions. sounds like hes onto a winner. His brewing alines alot with how I liked to brew throwing all sorts of fruit and spices in my beer lol.

cheers Don thought I'd pop in just quickly ;) ;). this ginger beer is a little different as you see using a wild fermentation. ginger is readily available for me as is tumeric. once you get the bug going you can use it to ferment any fruity beverage.
