My LBHS got in a couple of the new All Rounder fermenters. It comes with the complete pressure kit including blow-tie spunding valve). Haven't had time to brew with it yet but hopefully in a couple weeks.

I missed "stir" in that post. If you want to rouse the yeast in a fermentation vessel, gently rock it back and forth a few times. Never reach in and stir once fermentation has begun.
I have never brewed an official NEIPA or WCIPA, but have brewed some that are close. While they may improve quicker, the flavor is better a week or two later.
Magnum would be a good bittering hop and the other three would make a great IPA. I entered Simcoe, Columbus, & Chinook into the Recipe Search tool on this site and it came up with a ton of American IPA recipes, including clones of Bells Hop Slam and Blind Pig.
