Anyone have experience cooling overnight. Putting wort in a cube and then "sleeping on it." Like to have your opinion... Pros and cons.

Yep fairly often actually got a brew on tap atm that I "cubed" did a double batch cubed half for down the track and put the rest of the wort into fermentation.

So pros
you can brew on a whim even when pipelines full and have some wort at the ready in waiting.

You can pinch some cubed wort once chilled to stir up a "real wort starter".

If your not a fan of break material you can drain off the top of this pretty easily.

Cons

You gotta be careful with bittering hop additions. Usually you add your 60 at 30 flavour at flame out or to cube.

So probably not suited to IPA style brews.

Dealing with boiling sticky wort so can be dangerous.

Botulism I think it's called but I'm not dead yet from the odd cube ferment I've done.

I know gash slug got me onto it with his brew tube type videos on the YouTube.

Good luck with it don't let the neigh Sayers hold you back find out if it's for you or not.

I look at cube ing as another tool in your brew belt.
