Fermentables.

i am getting ready to brew a Cali Creamin Clone. there are a lot of fermentables. Is it suggested that i throw all of them into the mash tun together right at dough in? or should i add the oats, or corn later in the mash

Is there any reason why Porridge Oats can't be used instead of the Flaked Oats that the Homebrew shops sell? It works out at less than half the price weight for weight but is there any difference in the useability?

None whatsoever. As long as you don't mean steel-cut oat grits. They need a cereal mash.
 
I use Quaker quick oats for my flaked oats.
