I know its nothing to be concerned about for most or all of us, but i see weyermanns is now selling sauergut (sour wort) which i have been making my own for the past year. It is natural biological acidification.

And for those interested in attempting to clone a few of your favorite beverages ward labs now testing finished beer.

The analysis could help you in water and recipe building .

Just food for thought.

That Wardlab beer testing is actually pretty damn cool! A bit pricey, but man, if you really wanted to start nailing down your ibu's, that test could be a handy tool I'd think. It might even help some of us that grow our own hops to maybe have an idea or ballpark of where our hops are ibu wise. I would use my own hops more for bittering etc if I knew.

I had the water tested via Ward. Really helped with salts and acid additions. On finished beer, good point on IBUs. My hops are just two years old. Probably best to wait another year for testing. Maybe a SMaSH for the Ward beer test...

Nice, a little pricey but not out of reason.

A person could do a smash with just the homegrown bittering hops, should be close. Lots of other info available too.
