Going to brew this weekend and I will need to use 5.5 grams of dry yeast (3 gal batch). If I seal the remaining yeast and then vac seal and put in the fridge will that be good to last 3 weeks before using the rest in another brew?
 
I have never done it but have read plenty of people on forums doing it. I think it will be fine since it is vacuum sealed. A lot of people just fold the package and tape it shut and it works fine. Just make sure to re-hydrate it before pitching. If it doesn't work you can always pitch a new package.
 
dry yeast can go in the freezer too I have a block of bread yeast in my freezer now, it thaws very fast
 
It's cheap. Use the whole pack.
 
Not really cheap when you are doing small batches in comparison to the grains and small amount of hops used.
Nor representative of pitch rates, another variable that can make a difference in the outcome.
