Hoch (think "ho" + clear your throat) kurz (pronounced "Curt's"). It means "high short," a replacement for traditional decoction techniques once they were no longer needed for malt conversion.
 
Nice presentation. I have brewed a lot of German beers, but not the Festbier. I might give it a try. The 128F rest also targets beta glucanase which helps with mash flow. Did I hear you right that your mash efficiency was 95%?

LOL yes. 95% efficiency.... We all looked at each other dumfounded. We just ran with it and it was halfway between a Festbier and Maibock. Delicious beer. Didn't last in the keg.
