Using the recipe editor

Use the Quick Water Requirements feature - it's in the "Recipe Tools" dropdown, The first line is the total water. You'll see the "Strike Water" entry, then an entry for remaining Sparge Water. These are calculated based on your defaults in your equipment profile. You'll have to cllick that "Add" button to add another mash step.

Keep in mind that you'll only really know certain aspects of your equipment profile, like boil off rate, by brewing and taking notes. So just start with the defaults and don't worry about getting everything perfect. Just keep taking notes and updating your profile till you get it dialed in, might take a few brews.

Do you mean the "Mash Calculator?"

No, the mash calculator won't tell you how much more water you need for the sparge. The quick water requirements will. Once you have the figure from there, fill it into the mash calculator as your sparge volume.

Nice banjo, by the way.
