Notes
6/14/2019--Making a 2-liter 1.050 starter. Had to get some same day delivery yeast from Amazon because I've been brewing so much lately.
Pitched at 0425.
6/16/2019--The starter has been cold crashing for 24+ hours so far. I ground all of the grains and treated the water. Everything is ready to go. Ima go to bed shortly and start brewing when I wake up. Brew day should go smooth as FUCK!
I also need to de-gas a bunch of wine and clarify the sangria kit. Additionally, I need to transfer the Black IPA to the final keg for conditioning, and move the Hazy IPA to the brite tank and start dry hopping. I think the Irish Red Ale needs to cook for another week. Should make for another busy day.
This one and the Irish Red will go straight into kegs with gelatin next week. I'll use the new green kegs for these and the converted pin locks for the IPAs.
6/16/2019--The brew day is going smooth. I switched up the mash a bit.
I started both the cereal mash and the main mash at the same time. 15 minute protein rest--122--on both. 30 minute saccharification rest--153 (+/-)--on the cereal mash. 60 minute beta--148--on the main. 30 minute medium simmer on the cereal. Raised the main for the Alpha--158--and cooled the cereal down to 156. Combined both and did a 60 minute alpha--158. For the record, the cereal mash weighed in at 1.060.
Post mash/pre boil is 1.051. And, it tastes super sweet.
1.058 going into the fermentor.
1.055/13.6. Pitched yeast at 0445.
7/4/2019--1.020/5.1. Racked to the brite tank with gelatin. I hope the gravity drops a bit more, but it smells amazing--tastes a little flat.
7/11/2019--I've been leaving the thermostat at 78 all week when I go to work. Now, all of a sudden this beer is actively fermenting again. I had to put a blow off tube back on it. I think it'll drop some more--gravity wise.
7/25/2019--1.014/3.6 for 5.38% ABV. The brite tanks are awesome as clarifiers and as secondary fermentors. This dropped another 6 points for a respectable 1.014. It smells good already and it is going to get a good long conditioning rest.
10/22/2019--Dropped this into the keezer tonight. I'll give it a couple of weeks to crash and carbonate. Looks a little cloudy and it is foamy as all get out. I'll let it cool down for a couple of days and then I'll hook up the CO2.
10/30/2019--A little hoppier than called for, but as always--extremely drinkable. This keg will go fast. Kentucky Common--still my favorite. Can't wait to go back to black patent, noble hops, and the white corn grits. The next batch will be even better. Perhaps, it will be the master Common recipe.
