Notes
  1. start with 5.5 gallons of water
  2. mash @ 154F / 60-90 mins
  3. Mash out @ 175F / 15 mins
  4. Sparge with 2-2.5 Gallon of 175F water Depending on what
    gravity you are shooting for adjust gravity now because you
    wont be boiling off ant wort.
  5. add chiller and hops for hop stand 30 mins
  6. chill wort to room temp (my temp is 74F) pitch Voss Kveik
    yeast.
  7. additional hop add 1st at High Krausen then again when fermentation stops. 7 days after second pitch cold crash and package. start drinking 5-7 days after kegging.

    NOTE. I pull 1 quart of wort out and boil to dissolve whirlfoc and yeast nutrient. Then add it back to kettle. I always use whirlfoc and still have a nice Hazy NEIPA. I dont add Cold side fining though.
