Notes

Ferment at 48 degrees until fermentation starts to slow. Then start slowing ramping temp to 52 (0.5 - 1 degree a day). After fermentation really slows, start ramping to 63 (2 degrees a day). Let sit at 63 for 3 days. Ensure there is no more fermentation activity, then rack to keg, pressurize, and cold crash.

Let sit at lager temp (as cold as you can get it, without freezing) for a couple weeks.


Fermentation should take approx 20-30 days.
