Biere de Miel. Honey in secondary, when primary is nearly done. I put the honey in cooling, boiled H20 (lo DO pick up). It also puts easier. No need to boil the honey, you'll lose aromatics. Bottle conditioned with honey. Great honey aroma and taste, but finishes very dry. Careful with attenuation as yeast will gobble us the simple sugars.
