Notes
09/28/2020--Everything is on hand for this and I still need 1-pound of black patent for the Sparrow Hawk Porter so I guess this one goes first. I picked up some world famous Kveik from the LHBS so I'm going to try it out on this batch. Also, I couldn't resist the Genesis plastic fermentors after I saw them. Plus, they are actually made in the USA--what? Ima use the plastic for the extract batches.
10/1/2020--Pitched yeast at 0400 and the temperature equalized at 84F--it will drop overnight but the Kveik is supposed to like high temperatures.
I rehydrated the yeast in Goferm following More Beer's instructions. I also added DAP and some Fermaid-K to the starter. I am anxious to see how well the process works. And. how good the Kveik really is.
10/4/2020--Steeped the grains in 2.5-gallons of water at 150F for 30 minutes. Removed the grains and added the maltodextrine and half of the dry and liquid malt extracts. Brought to a boil. Added 1-ounce of Perle hops and set the timer for 15 minutes.
Added .5-whirlfloc at 15 minutes. Added the rest of the extracts, the corn sugar, and 1-ounce of Saaz at 0 minutes. Killed the heat and set the timer for 15 minutes. Finally, transferred the wort onto 3.5-gallons of room temperature water in the fermentor. I'm not sure what the temperature is but it is too high to pitch. I'm going to let it cool overnight--naturally. I will aerate the beer after it has cooled and before I pitch the yeast.
I ended up with just under 6-gallons in the fermentor. No idea what the gravity is yet.
10/5/2020--1.045/11.2. That'll teach me to top off the fermentor versus adding all of the water at once. 1.045 is still respectable. Pitched yeast at 1240. Aerated it for about 10 minutes before it started foaming out of the fermentor.
1800--It's already bubbling away.
10/20/2020--Added some gelatin to the fermentor. I did not take a sample as I will take a final sample next weekend when I keg it.
11/1/2020--1.010/2.58 for 4.53% ABV. Kegged.
