Was able to get a lot more wort out of the batch. I will let it boil down and see what I end up yielding. Main focus is hitting the gravity. Will have to figure out what I want to do with the extra wort. |

After 90 minute boil gravity of 8.25 gallons of wort was 1.073. Decided to keep the boil going to get the gravity higher with more boil off. |

Strong fermentation for the first 2 days and then chilled out. Today it would only bubble every 3 minutes. I gave it a few more days, but the gravity never went any lower. |

I tasted my first pint. It has a little bit of a yeasty flavor which is probably due to not hitting my FG. The head retention is minimal, need to put more CO2, but waiting for a new regulator, so in the meantime I have put this on nitro. Has a dark brown with a little red hue to it. Has a smooth finish with roasted notes and a little bit of a bite to it, which is expected at the ABV of nearly 10%. |
