Notes
  • Bring 3 gallons water to 65-75˚C (150-170˚F).
  • Put grain in a muslin bag and let it steep for 30 minutes, keeping temperature fairly constant.
  • Remove muslin bag, let wort drip out, bring temp to high.
  • Prior to boil, empty cans of liquid malt extract into hot wort. Ensure well stirred so that extract does not get stuck to bottom.
  • Once boiling, begin boil timer. Add hops as per schedule.
  • Add whirlfloc with 15 mins remaining in the boil.
  • Top up to 5 gallons using clean water.
  • Add maltodextrin.
  • Remove from boil and chill to 20˚C.
  • Transfer wort to primary fermenter.
  • Aerate wort by vigorously shaking the fermenter.
  • Pitch yeast.
  • Primary fermentation 14 days.
  • Transfer beer to bottling bucket.
  • Add apricot flavouring to bottling bucket.
  • Boil 5 oz corn sugar with 1/2 cup water, add to bucket.
  • Bottle conditioning 14 days.
  • Taste — report back with notes.
