Notes

My first try at all-grain on a small batch. I plan on building this recipe into a light version of a holiday ale. Once the baseline beer is dialed in, I will brew several batches, adding a new ingredient each time. I will start with vanilla and then possibly allspice. I expect the IBU's will have to increase some to compensate for additional sweetness. Yep, this is not a traditional holiday brew. But I am not a fan of Anise or big IBU's. Plus I like the lighter alcohol.

8/22/2017 - Nice beer. I need to add some wheat for head retention. More Hops for balance. Overall I am happy with the result.

Changed my mind on holiday ale. Too light. Now on to Cream Ale #2
