12:30 - 4.5 gal water (2 gal distilled, 2.5 gal bspa), 2.3 g gypsum, quarter tablet campden mixed together
1:00 - Heating to 161F
1:20p - Dough-in. 152F
1:25p - 149F, removing 3 qts for decoction
1:40p - decoction boiloing
1:55p - 142F, w/ decoction: 151F. Need to head to 158F.
2:06p - 159F, 15min rest
2:30p - mash out
2:50p - 18P => 1.074, 21.2 lbs => 2 gal, keep adding
3:00p - 13.3P => 1.054, 32 lbs => 3.25 gal, 1 qt and squeeze extra hard
3:10p - 12.2P => 1.049, 34.4 lbs => 3.5 gal, add a little more
3:15p - 11.3P 1.045, 34.4 lbs => 3.55 gal, good enough for govt work. Added a half cup because why not. |
