Started making my wild yeast starter yesterday evening. The wild yeast was captured on 12/18/2023. The capture wort was 1.040 and a pH of 3.5. The gravity was checked two weeks later and was 1.020. Note, I believe if I had left it longer, or the wort volume was less, the likelihood is that the FG would have been less.
I intend to transfer this starter into a larger volume of wort Saturday morning. The target brew day is likely to be Monday or Tuesday evening. |

Had two days of vigorous fermenting action and it has now dropped down to occasional bubbles. The beer will be checked next Saturday and moved into secondary fermenter where the oak chips will be added. |

Transferred the beer into another bucket after 2 weeks. The final gravity was 1.004 which meant that the abv has come out at 6.7%. Nearly 3 oz of medium American oak chips were added to the bucket. The beer will will now sit in the new bucket for a minimum of 2 weeks.
The beer tastes good. |

Carried out a taste test and the oak flavor is coming through nicely. Will probably bottle next weekend.
The smell reminded me a little of when I made port. |
