- yeast manufacture date: 5/5/14 -> 90% viability according to Brewersfriend
- first step gives 194 billion cells
- second step gives 323 billion cells
- 226 billion cells needed, will keep the rest for storage |

- 5 gal mash @ 169 F + 13.5 lb grain @ 72 F (1.48 qt/lb) = 155 F mash temp
- 3.5 gal batch sparge @ 180 F
- Initial mash temp 157
- 30 min. mash temp 156
- @ 0 min, maybe 152?
- sparged with 3.5 gal @ 180 F in 20BK, = ! 160 F sparge

- did not top up, used up pretty much everything in brew kettle
- hops smelled pretty hay like, werent that good really. (bought from AIH)
- will pitch yeast @ 66 F, raise to 68 F
- yeast pitched @ 66 F, kept 1/3 of starter for later use
- used 4 fermcap drops because of high volume |

- was @ 66 F, rose to 67 F, will let it ferment first day @ 68 F
- good smooth beginning fermentation currently, used 4 fermcap drops |

- @ 69 F in morning, primary ferment
- @ 66 F in afternoon, then accidentally dropped beer down to 63 F at night after adjusting probe |

- Started cold brew coffee
- coffee bought from bridgeport coffee:
"Mexico - El Triunfo Biosphere Reserve

Medium body - sweet chocolate - easy finish"
Best by 8-31-14
- Boiled water with a dusting of campden for a while then let cool
- Poured six ounces (wt) of coarsely ground coffee into jar then added 32 fluid ounces of water ontop @ 630pm

- racked because of Andy's move instead of bottling, blew in CO2 to secondary
- strained and filtered coldbrew netting about 3 cups after 16 hour extraction on counter |

- estimated 5.2 gal @ 75 F @ 2.4 vol of co2 = 5 oz of priming in 2 cups h2o
- added all cold brewed coffee, didnt bother to measure
- it was +/- 3 cups worth
- got 54 12 oz bottles + 1 broken + 1 bottles worth left over = 5.25 gal |
