AROMA: yeasty, bready. light notes of sulfur. no apparent diacetyl, some acetaldehyde, no DMS
TASTE: full in the mouth. malt and caramel notes, pleasing low level of bitterness, expecting the bitterness to become more apparent later. sweet clean finish with some acetaldehyde.
all around very good. going to continue fermentation until tomorrow then raise for D rest |

Raised to 63 for D rest on the 5th. 48 hrs in so far. going to go at least another day and check for terminal gravity |

acetaldehyde still present, going to continue d rest for a few more days and hope it will clear itself. if still present going to throw a healthy pitch of yeast in. aside from the acetaldehyde. smooth and drinkable. pleasingly bitter to contrast the slight sweetness. clearing well. |
