Notes

Add in 3lb of Graham Crackers (no preservatives) to the mash

At flameout add lime zest (peel would be easier to filter, use peeler and only take green) 2-3 limes (3-6 key limes)

Ferment at 60°F (16°C) for one week

Then allow temperature to free rise to 70°F (21°C)

Upon completion of fermentation (taste test before dry hopping), Add in 1/2 lb Graham Crackers (no preservatives) to Primary in hop bag, add dry hops direct and wait 2–3 days

Crash the beer to 35°F (2°C)

Then bottle or keg and carbonate to approximately 2.5 volumes of CO2.

Pull samples off and taste test with following to calculate potency before kegging:

For more lime flavor; at kegging add lime zest/peel soaked in vodka to taste; 6-8 key lime zest/peels to 2oz or 1/4 cup decent vodka; shake every other day (strain before adding)

Duplicate with two fresh Mexican vanilla beans; scrape inside and soak

This was a solid brew, will brew again...maybe a touch more vanilla, maybe more lime, maybe a little more GC...overall really good, lots of good compliments
